Best applications: (1) Mezcal Margarita — straight Margarita spec with mezcal instead of (or in addition to) tequila. Try half tequila, half mezcal for a 'half-smoked' Margarita that's less intense than full mezcal. (2) Naked and Famous — equal parts (0.75 oz each) mezcal, Aperol, yellow Chartreuse, fresh lime juice. Shaken, served up. One of the best modern cocktails and a perfect mezcal showcase. (3) Oaxaca Old Fashioned — 1.5 oz reposado tequila, 0.5 oz mezcal, 1 tsp agave syrup, 2 dashes Angostura, flamed orange peel. The mezcal-tequila combination adds depth without overwhelming. (4) Mezcal Negroni — mezcal substituted for gin in a classic Negroni. The Campari and sweet vermouth handle the smoke beautifully. (5) Mezcal Paloma — same as a regular Paloma but with mezcal. Espadín mezcals (the most common variety) are the right choice for mixing; sipping mezcals (tobalá, madrecuixe, arroqueño) are usually too expensive and characterful to mix.
